How can we tell if the group is warm enough?

Touch the chrome near the top of the group carefully. After a full warm-up it should be too hot to keep your hand on. If it is only warm while the boiler gauge reads normal, hot water is not reaching the group and the loop needs cleaning.

Our first shot of the morning is sour and the later ones are better. Is the machine failing?

Not necessarily. A heat-exchanger group needs about half an hour to warm through, longer in a cool kitchen. Wait until the group is hot, then run a short flush before the first shot. If the second and third shots are still sour, the loop may be restricted, and that is bench work.

Does the fog make any difference to an espresso machine?

Mostly through the room. A cool Daly City kitchen takes longer to bring the group up, and the first shot suffers. Damp air matters more to exposed metal and rubber than to anything inside the case, so dry the wand and drip tray area after each session.

It runs through a copper tube inside the steam boiler, and a small loop carries hot water up to the group and back to keep the group warm. A narrow restrictor sets how fast that loop circulates. When scale narrows it, the group runs cool and shots taste sour. Scale in the group's own passages slows the shot to a thin stream.

What we repair on the bench.

Group cool to the touch after a full warm-up. If the boiler gauge sits in its normal range but the group stays barely warm, hot water is not circulating. We open the loop, clear or replace the scaled restrictor, flush the heat exchanger, and check that the group comes up to temperature on its own.
Shots dribbling out in a thin stream. A fine grind can do this, so we test with the portafilter out first. If the flow from the shower screen is still weak, scale is narrowing the path through the heat exchanger or the group. We clean the affected parts and measure the flow before and after.
Hot-water tap that only trickles. The hot-water tap draws straight from the steam boiler. Where scale has built up in that boiler, the valve seat and its outlet narrow with everything else. We rebuild the valve, clear the outlet, and check the boiler for loose scale that would block it again.
