They collect on the shower screen and on the brass dispersion block behind it, and over time they close off some of the holes. Water then lands on one side of the puck, the shot channels, and the coffee turns thin and sour however carefully it was ground and tamped.

Uneven flow from the shower screen. With the portafilter out, water from the group should fall in an even shower. Dry patches or a few strong jets mean blocked holes. We remove the screen and the dispersion block, clean both, and replace the screen if its mesh is damaged or warped.
Stale, bitter taste that home cleaning does not shift. Coffee oil builds up behind the screen where a brush cannot reach, and it turns rancid in the heat. We take the group down to bare metal, clean every surface the brew water touches, and clear old coffee out of the drain path.
Group gasket baked too hard to remove. An old gasket can harden so much that it breaks into pieces on the way out, and prying at it with a screwdriver scores the group. We remove it with the right tools, clean the groove, and fit a new gasket with a screen that matches it.
