A heat-exchanger Rocket does not hold brew water at a set temperature. The water for each shot is heated on its way through the steam boiler, and a loop of circulating water keeps the brass group warm. Left idle for a while, the water in the exchanger gets hotter than coffee wants, which is why the shot after a long pause can taste scorched. A short flush through the group before the shot brings it back into range.
When a flush no longer fixes it, or the group stays cool instead, something inside has changed: the boiler pressure setting, the narrow restrictor in the circulation loop, or scale in the exchanger. We collect from the rebuilt homes on the west side near Stevens Creek and the 1960s and 70s ranches on the eastern grid, run the machine through idle and flush cycles on the bench, and quote before any repair.

What we repair on the bench.
- Shots tasting scorched even after a flush. If a normal flush does not bring the temperature down, the boiler may be running at a higher pressure than it should. We check where the pressurestat or controller cuts out, compare it with the gauge, and reset it to a range that suits the machine and your coffee.
- Group head that never gets properly hot. The loop between the boiler and the group runs through a small restrictor. Scale can close it down until the group barely warms, and shots come out sour. We open the loop, clean or replace the restrictor, flush the exchanger, and time how long the group takes to come up to temperature.
- Boiler pressure turned up by a previous owner. Secondhand machines sometimes arrive with the pressure raised to chase more steam. That makes the brew water too hot and keeps lifting the safety valve. We set the pressure back to a sensible range and check that the safety valve reseats cleanly after all that lifting.

How much water should we flush before a shot?
It depends on how long the machine has been idle. After a long rest, flush until the hissing and spitting at the group turn into a steady stream, then a moment longer. Between back-to-back shots a short flush is usually enough. If you have to flush a lot every time, have the boiler pressure checked. -
Can the brew temperature be changed on a heat-exchanger Rocket?
Indirectly. On a machine with a mechanical pressurestat, brew temperature follows boiler pressure, so a small change to the pressure setting moves it. On machines with an electronic controller it is a menu setting. Either way, your flushing habit changes the result as much as the setting does. -
Do you collect from Garden Gate and the eastern grid?
Yes, anywhere in 95014. Have the machine off and cool, the tank and drip tray empty, and the portafilter bagged. If the machine is plumbed to a water line, say so when you book, since the hose has to be disconnected first. -
