A handful of the sit-down restaurants and coffee counters along those two strips run a WE8 or a GIGA X8 behind the espresso station.
Being based here means I am not crossing the bridge every time a B Street cafe calls with a brewing problem. The Peninsula water is hard enough that descaling and brew unit work still make up most of the calls, same as anywhere else on this side of the bay.

What we repair on the bench.
- Brew unit rebuild for restaurant-row volume. A restaurant running espresso drinks through lunch and dinner service wears the brew unit faster than an office ever would. I rebuild it with new seals and gaskets and reset the maintenance counter so it is not overdue again in a few months.
- Descaling and water filtration setup. San Mateo tap water scales a plumbed machine steadily, and a restaurant running it all service long feels that first as slow pours. I descale the circuit and set up or service the inline filter so the interval stretches out.
- Pump and flow meter faults. A machine that under-fills a cup or throws a water-related error on a busy shift usually has a tired pump or a fouled flow meter. I test both against the symptom and replace whichever one is actually failing.
