E61 group gasket and shower screen. Two rush periods a day wears the E61 group gasket fast, and a worn shower screen channels water instead of showering it evenly. We pull the group, replace the gasket and screen, and check the dispersion so shots pull straight again.
Volumetric flow meter drift. On a Faema set up for programmed pours, a fouled or failing flow meter throws the dose off, so a shot that used to stop at 2 oz keeps running. We pull and clean or replace the meter and reprogram the buttons to the right volume.
Pressurestat and steam pressure. A steam wand that's gone weak or a boiler that won't hold pressure is usually the pressurestat drifting out of calibration. We test it against a gauge and replace it when it can't hold the set point.
