A burner that clicks nonstop even after the flame catches, or a rangetop where steam from a big pot boil has soaked the spark switches, is a frequent one in these open wine-country kitchens. Rangetop spark modules and continuous clicking. When a Viking rangetop keeps sparking after the burner lights, moisture or grease has usually shorted a spark switch or the module. We dry and test the switches, check the module, and replace whatever is holding the spark circuit closed. In the open kitchens out by the vineyards, big pot boils push steam into the control area, so I seal and reseat the switches while I am there.
Ventilation hood blower and grease buildup. Viking ventilation over a heavy range loses pull when the blower motor tires or the baffles and duct pack with grease. We clean the baffles and housing, test the blower motor and speed control, and replace the motor if it is drawing wrong or running loud. A hood that no longer clears smoke is usually grease first and motor second.
Range burner igniters and flame pattern. On the Viking range burners, a head that will not catch or burns yellow points to a cracked igniter or a plugged port. We fit a new igniter, clear the ports, and confirm the flame runs blue and even around the ring. I check the caps for corrosion too, since spillover pits them over the years.
