  • Oven elements and thermostats that will not hold temperature. A Viking range oven or wall oven that drifts off its set point wears out the bake element, the broil element, or the temperature sensor first. We measure the element and the sensor against the control, confirm which one is out of spec, and replace it. After the swap we run a full heat cycle and check the actual cavity temperature so you are not guessing whether it is fixed.
  • Rangetop burners that will not simmer low. On a Viking rangetop or range the sealed burners should hold a clean low flame for sauces and reductions. When a burner only runs high, or the flame lifts and blows out, the fault is usually the burner cap seating, a clogged port, or the gas valve. We clean and reseat the burner, and replace the valve if the simmer still will not settle.
  • Built-in refrigerator doors that will not seal. Viking built-in refrigeration in these estate kitchens is framed into the cabinetry, so a sagging door or a tired gasket lets warm air in and makes the compressor run long. We adjust the hinges, replace the gasket, and check that the door closes flush with the panel so the unit holds temperature without overworking.
