A handful of the sit-down restaurants and coffee counters on those two strips run a WMF 5000S+ or 9000S+ behind the espresso station.

Being based here means I'm not crossing the bridge every time a B Street kitchen calls with a machine down mid-service. The water on this side of the Peninsula still scales a boiler over time, so descaling and brewer group work make up most of what I see, same as anywhere nearby.

I rebuild it with new seals, clean the group, and reset the maintenance counter so it isn't overdue again in a few months.
Boiler descale and filtration setup. San Mateo tap water scales a plumbed machine steadily, and a restaurant running it through a full service feels that first as a slow pour. I descale the boiler and set up or service the inline filter so the interval stretches out.
Grinder burr calibration. A machine pulling steady volume through service dulls its burr set within a year or two, and the shot goes thin before anyone checks the grind setting. I replace the burrs and recalibrate the dose.
