Brew solenoid and group timing. A long county-seat workday means the group cycles all day without much of a break. When a shot starts late or a group won't stop dispensing on time, we're usually looking at a worn or scaled brew solenoid.
Heating element and boiler descaling. Downtown cafes open early for the courthouse crowd and stay open late for the theatre crowd, so the boiler barely gets a rest. We descale it on schedule and replace the heating element when recovery time starts slipping.
Dispersion screen and group gasket wear. High daily cover counts flatten screens and wear out gaskets faster than a slower neighborhood cafe would see. We replace both together so the puck comes out even and the portafilter locks up tight.
