Brew group seals replaced on schedule. Seals on the brew group wear with every cycle, whatever the water. We replace them at an interval tied to your shot count, which keeps the unit from leaking or jamming in the middle of service.
Milk circuit gaskets changed before the foam goes. Milk gaskets harden slowly, and the foam gets worse a little at a time until someone finally notices. We swap the gaskets during planned maintenance, clean the lines, and test the foam before the machine leaves our bench.
Descaling set by what comes out. Scale still builds on EBMUD water, only slower. We descale the boilers and the flow path, note how much came out, and set the next interval from that instead of a fixed date on the calendar.
