We break down the boiler, run a descale cycle through the steam side, and set a filter and interval schedule matched to your actual pour count rather than a generic default.
- Brew unit rebuild. A Coffee Skye pulling shots hard through the morning BART rush and mostly idle after 2pm wears its brew unit unevenly. When shots turn weak or the motor starts grinding, we take the group apart, rebuild the seals and screen, and bring the brew pressure back to spec.
- Grinder and dose calibration. At a small counter, regulars notice a grinder drifting off dose within a day. We open the housing, inspect the burrs for flat spots, and walk the dose back to target so the shot holds steady through the shift.
- Milk system and Best Foam repair. Morning latte orders headed for the BART platforms load the milk system hard in a short window. We swap cracked tubing, clear buildup out of the steam valves, and correct foam that's coming out watery or uneven.
