The compressor short-cycles, the rail warms, and cut vegetables lose their hold temperature. New gaskets and a lid check put the unit back inside food-safe range.
  • Evaporator icing from a defrost timer stuck in cool mode. Catering reach-ins that sit loaded between events are prone to silent defrost timer failure. Ice grows on the evaporator until airflow stops entirely. We thaw the coil completely, prove out the heater and drain, and fit a new timer so the unit is dependable for the next event load-in.
