Rail temperature drifts up while the walk-in below reads fine, so it gets missed until someone finally checks with a thermometer. I replace the gasket and verify rail temp with a probe in product before I sign off.
- Controller faults from nightly power washing. Some downtown kitchens hose down the whole line at closing, and water finds its way into the control box on units that weren't sealed for that kind of cleaning. The controller starts throwing intermittent faults the next morning that look electrical but trace back to moisture in the connectors. I dry out and clean the compartment, and where it's a repeat problem I'll suggest a cleaning routine that keeps the spray off that panel.

San Mateo is close to the center of that route now, not the edge of it. The technician covering it is based in San Mateo County, so this is regular territory for him, and I'm not going to promise you a clock time, just that the drive isn't the San Ramon haul it used to be. -
Our kitchen power washes every night. Could that be causing our fridge problems?
It can, if water is reaching the control box. I've seen it more than once downtown. I'll check the compartment seal when I'm out there, and if that's the source I'll tell you plainly rather than replacing a board that was never the real problem. -
