Sometimes a thorough coil cleaning and fin comb buys real time, sometimes the coil itself needs replacing.
  • Door hinge and gasket track rust. Harbor humidity works on the hinges and the metal gasket track around a reach-in or prep table door faster than inland kitchens ever see. Once rust builds up in the track, the gasket can't seat properly even if the gasket itself is fine, and the door stops sealing tight. I clean out the corrosion, true up the hinge if it's sagging, and replace the gasket if it's compromised too.
