- Seized condenser fan motors on single-door reach-ins. In a small shop the reach-in sits inches from the wall and the coil never gets cleaned. Dust load kills the fan motor, pressure spikes, and the compressor thermal-trips right at dinner. Motor and blade replacement plus a proper coil cleaning usually brings the box back the same visit.
- Pizza and sandwich prep gasket failures. TPR and MST prep tables take constant lid and door abuse. Split gaskets leak warm air over the pan rail, the thermostat chases it, and cheese on the end pans sits above 41. I replace the exact gasket profile and check that lids still seat square.
- Thermostat sensors reading the cabinet wrong. A drifted probe is the sneakiest Turbo Air failure because the display lies to you. The Dixell shows 38 while a thermometer in the middle shelf reads 46. I confirm with calibrated instruments and replace the sensor, and I recommend every owner keep a cheap shelf thermometer as a cross-check.
