- Base drain clogged by spills from the rail. Food and brine from the rail find their way into the cabinet and into the defrost drain. A plugged drain backs water up, freezes on the coil or overflows onto the floor. We clear the line, clean the pan and check the defrost cycle.

The pans on our Turbo Air sandwich table are warm but the cabinet below is cold. Why?
The rail depends on airflow from below and a good seal above. A torn lid gasket, overfilled pans or a slow evaporator fan starve the rail while the cabinet still reads fine. We probe the product in the pans and fix whichever part is losing the cold. -
Should we turn the prep table off overnight?
No. Close the lid over the rail, keep the unit running and cover or store the pans. Switching off lets the cabinet warm, and the next pull-down strains the compressor. If the unit cannot hold overnight with the lid down, that is a fault worth a look. -
Does it matter that our prep table sits next to the grill?
Yes. The condenser pulls air from around it, and hot air off a grill or fryer cuts its capacity and coats the coil with grease. Leave a gap, keep the grille clean and have the coil checked if the rail runs warm by midday.
