Condenser fan motors choked with kitchen grease. Once the coil's caked up, the fan motor strains and eventually stalls, generally at the busiest possible moment. I swap in a new motor, strip the coil clean, and set a cleaning interval that fits how hard the kitchen runs it.
Prep table door and lid gaskets. On Solano Avenue, a prep table's doors get worked hard through the lunch stretch, and the gaskets crush down from the repeated slamming. Once that happens the rail loses its grip on 40 degrees and the end pans drift warm. I swap in gaskets matched to the correct Turbo Air profile and check hinge alignment before closing the doors back up.
Dixell sensor faults and false readings. A probe reading high sends the controller into over-freezing the coil, chasing a number that isn't real. One reading low does the opposite, showing 37 on the display while the product inside is actually warm. I check real box temperature independently first, then replace whichever part is at fault and confirm the new reading is accurate.
