Seized auger after seasonal storage. A Donper that was put away for winter with product residue in the cylinder often will not turn in spring. Sugar crystallizes on the auger and seal faces and the gear motor strains against it until the overload trips. I disassemble the barrel, clean the auger and bushings properly, replace the seal since it is already compromised, and verify the gear motor did not chew itself up fighting the blockage.
Weak freezing on estate installations with poor ventilation. Built-in and enclosed installations are common in Saratoga home kitchens, and Donper condensers need airflow that cabinetry often steals. The machine slowly loses freezing capacity, the compressor runs hot, and eventually it fails early. I measure condenser inlet and outlet temperatures, clean the coil, and tell you honestly whether the enclosure needs venting before the compressor pays the price.
Hopper temperature sensor drift causing soft or icy product. Donper units regulate the hopper and cylinder off thermistors, and when a sensor drifts the product consistency goes wrong even though the refrigeration is healthy. Soft serve turns soupy or slush freezes into a solid block overnight. I check sensor readings against a calibrated thermometer before condemning anything expensive, because a $30 probe is a much better outcome than a guessed-at compressor.
