On models with a refrigerated hopper there is the hopper that keeps mix cold, the freezing cylinder that turns it into product, and the mix sensor that tells the machine when to refill. When product comes out runny, any of the three can be behind it.

Common repairs we handle.

  • Soft serve coming out runny. Worn scraper blades leave a layer of frozen product on the cylinder wall, which insulates the rest and keeps it loose. A low refrigerant charge or a dirty condenser does the same from the other side. We check the blades first, then the condenser and the cylinder temperature.
  • Low-mix alarm with a full hopper. The mix sensor reads the level in the hopper. Dried mix on the probe or a failing sensor throws a false alarm and can stop the machine from freezing. We clean and test the sensor and its wiring, and replace it if it still reads wrong.
  • Hopper not keeping the mix cold. On models with a refrigerated hopper, mix held too warm is a food safety problem before it is a quality problem. A failing hopper sensor, a stuck valve or a weak charge can let it drift. We measure the mix temperature and trace the cause.

  • Why does our soft serve get runny in the afternoon?
    Demand and heat. When the machine is pulled hard, the cylinder gets less time to recover, and a dirty condenser or worn blades make that worse. If it stays runny even on slow afternoons, the blades or the refrigeration need a look.
  • How do we know the low-mix alarm is real?
    Look in the hopper. If the mix is well above the probe and the alarm is on, switch the machine off, then clean and sanitize the probe. If the alarm comes back with a full hopper, the sensor or its wiring has failed and we test it.
  • Can the hopper hold mix overnight?
    Only if your model has a refrigerated hopper and a standby mode, and only if the hopper holds the mix at 41 degrees or colder. Check with a probe thermometer. If it runs warmer, empty it at close and have us look at the hopper cooling.
