That is exactly the call to make on a Wednesday or Thursday. We work 7 days, but by Saturday morning in July the schedule is full of machines that already died. Midweek calls get midweek fixes, and the machine earns its keep all weekend.

Compressor overheating during peak-season duty. Downtown kitchens run hot in summer, and a granita machine's compressor sits in the worst of it. High head pressure trips the overload, the machine cycles off mid-rush, and product melts. I clean the condenser, verify the overload and start components, and if the location is the real problem, I say so and suggest where the machine can actually breathe.
Post-idle seal failures at the start of the season. Machines that sat through the rainy season fire up in May with seals that dried and shrank, and the first busy weekend pushes product past them into the drive housing. The seasonal pattern is so consistent that I recommend a pre-summer seal inspection for any Los Gatos machine that winters empty.
Torque shutdowns from overloaded thick mixes. Crews chasing a thicker, more photogenic pour drop the sugar ratio or overfill the hopper, and the auger motor trips its torque limit at the worst moments. I check the motor and sensor to rule out real faults, then set the crew up with a working ratio range in writing so the machine and the recipe stop fighting.
