Ultra-2 auger shaft seal leaking product. The rear auger seal on the Ultra-2 wears out on heavy duty cycles, and syrup starts weeping behind the hopper into the drum area. You will see sticky residue in the drip path and eventually a machine that smells sour no matter how often it is cleaned. I replace the seal and the wear ring together and check the auger shaft for scoring, because a scored shaft eats new seals in weeks.
Machine runs but product never freezes. Nine times out of ten on Park Street calls, the condenser filter is packed with dust and the airflow is gone, so the compressor cannot reject heat. Alameda's older commercial buildings also have marginal outlet voltage in some suites, which makes weak compressors fail sooner. I clean the condenser, verify amp draw against spec, and tell you honestly whether the compressor has life left.
Torque-out errors from thick product. When the brix ratio drifts too low on sugar, the slush freezes harder than the auger motor can turn and the machine trips its torque protection. Staff often blame the machine when the mix is the problem. I test the actual product with a refractometer, verify the torque sensor and auger drive, and leave the crew a written target ratio for the syrups they run.
