T3 group temperature wandering between shots. If the group reads steady on the display but shots swing from sour to bitter, we measure the water at the group with a reference probe. A drifting sensor gets replaced; a PID that cannot hold a correct sensor reading points us to the board.
Coffee boiler sitting at the wrong setpoint. The coffee boiler feeds the groups, so if it sits a few degrees off, every shot is off with it. We check the boiler sensor and the element, look for scale, and retune the setpoint once the hardware is right.
Steam pressure that surges and sags. Steam that surges and then drops points to a pressure sensor or control reacting late, or to an element that is weakening. We watch the pressure on the bench while drawing steam and replace the part that is lagging.
