  • Transformer failures from rough power. Generator power at catering sites and tired building wiring along the older commercial strips both stress the HV transformer. It gets loud, then it gets hot, then it opens. I test it under load, replace it when it is done, and check the capacitor and diode that were living on the same dirty supply.
  • Door hardware beaten loose by transport. Catering units ride in vans and get carried by their doors, which restaurant units never suffer. Hinges loosen, alignment drifts, and the interlocks stop reading. I rebuild the door hardware and torque the hinge mounts so the unit survives the next load-in.
  • Fan and airflow failures in continuous duty. Crew meal service means an hour of back-to-back cycles, and a fan that is even slightly degraded lets the magnetron overheat into shutdown. I replace marginal fans instead of nursing them, clean the intake path, and load-test the unit through a simulated rush before calling it fixed.
