Deck losing its top heat. Nine times out of ten it is a dead element or a thermostat sending the controller bad information. I meter every element and the control circuit itself, and I only replace the part that actually tests bad.
Sensor drift throwing off the bake. When the temperature sensor starts drifting, the oven swings past its target and then stalls out trying to correct, and you end up with one pizza that is perfect and the next that is not. Swapping the sensor and recalibrating the control fixes it, but I always run a full bake cycle afterward to prove the stone actually holds setpoint before I call the job done.
Panel switches gone stiff between parties. An oven that only gets fired up for weekend entertaining develops a different kind of wear than one running every night, switches stiffen up and contactors get sluggish just from sitting unused between parties. Before I call the panel good, I run every switch and contactor through its paces under load and swap out anything that hesitates or fails to respond.
