What we close on the truck.

Setpoint drifting high or low. When a deck starts scorching or underbaking at a dial setting that worked fine for years, the capillary thermostat or the digital probe has drifted. I verify against an independent surface reading on the stone and replace the actual failed component.
Contactor stuck closed or open. A deck that won't shut off, or one that won't fire at all, is often a contactor rather than the controller. I check it directly behind the panel instead of assuming the more expensive part is the problem.
Rotating deck drive binding. On the rotating Cuppone models some Laurel Street kitchens run for volume, the turntable drive picks up wear separate from the heating side. I service the drive and the heating elements together so one visit covers both.
