Cuppone in Cupertino
Cuppone commercial service.
Cupertino's pizza business lives on the lunch rush. Main Street Cupertino and the restaurant rows along Stevens Creek and De Anza feed tech campuses all day, and a deck oven that bakes uneven at 11:30 is a problem you feel on every ticket until close.
The Cuppone units we see here are the electric deck lines, Tiziano and Donatello mostly, running 230V single or three-phase. They fail in predictable spots: temperature sensors and thermostats first, then deck elements and the contactors behind the panel.
We come down 680 and 280 from San Ramon, about 45 minutes. We work as an independent commercial shop and we already service these ovens for Italian restaurant groups around the Bay, including all five Locanda locations.
Common repairs we do
What we close on the truck.
- Deck won't hold setpoint. Usually a failed temperature sensor or thermostat feeding the controller bad readings, not a dead oven. We confirm with a meter, replace the sensor, recalibrate, and run the deck under load to verify even heat across the stone.
- Cold floor or weak crown. Each deck has top and bottom elements. When one opens up, that deck bakes slow on the floor or pale on top. We test every element and the contactor driving it, because a dead contactor looks identical to a dead element from the front.
- Heat bleeding out the door. Door springs stretch and gaskets harden from nightly service. The deck recovers slow between bakes and the kitchen runs hot. We replace springs and gaskets and check the door seats square.

FAQ
Cuppone in Cupertino questions, answered.
-
Can you work around our lunch service?
Yes. Most Cupertino pizzerias here live off the weekday lunch crowd, so we schedule before opening or after the rush. Diagnosis on a deck oven usually fits in a morning window. -
Do you know the Cuppone electric deck lines?
We service the Tiziano, Donatello, Giotto, and Michelangelo decks regularly, plus the rotating decks and the mixers and proofers that run alongside them. We carry common electrical parts and source Italian-specific components per call. -
What does the visit cost?
The diagnostic is $75 and it's credited toward the repair when you go ahead. You get a written quote before we touch the oven.
