- Cold spot on one side of the stone. A single open element on the floor or crown bakes one side pale while the other burns. We test each element and its contactor, since a stuck contactor mimics a dead element exactly.
- Capillary safety thermostats tripping. Aged safety thermostats start tripping below their rating and kill a deck mid-service. We pulled a bank of them out of a Cuppone double deck for one client and the oven held temperature through the next dinner shift.
