- Deck falling short on temperature. Most of the time the culprit is a burned-out element or a thermostat reading wrong. Losing the one element on a single-deck home oven means the stone never gets hot enough for a proper bake. I test each element and the control circuit with a meter before touching anything, and I swap only the component that fails the test.
- Drifting sensor causing uneven bakes. A sensor that has started to drift sends the controller bad information, so the oven overshoots the target and then stalls trying to correct itself, and the bakes get inconsistent from one pizza to the next. I put in a new sensor, recalibrate the control, and put the oven through a complete bake cycle to confirm the stone is actually holding steady before I sign off.
- Switches and contactors stiff from disuse. A backyard oven used mainly on weekends wears differently than a restaurant deck running daily, the panel hardware, switches especially, get stiff and slow to respond just from long stretches of sitting idle rather than actual use. I cycle every switch and contactor while I am there and replace whatever does not respond cleanly.
