When dough sits flat at the end of its proof, we test the heater for continuity, check the thermostat against a probe reading and look at the door seal, which lets warm air out once it hardens.
Deck door that will not stay closed. Door springs stretch after years of opening and closing, and the door begins to hang open a finger's width. Heat spills over the loading area and the deck recovers slowly. We replace the springs as a pair, fit a new gasket if the old one has gone hard and check that the door sits square.
