- Sensors, thermostats, and calibration. A controller is only as honest as the sensor feeding it. Decks that drift, overshoot, or bake uneven get the sensor and thermostat circuit metered, the failed part replaced, and the controls recalibrated against actual deck temperature.
- Crown and floor element failures. Each deck heats from above and below. One open element and the bake goes lopsided. We test every element and its contactor and replace what failed, then confirm draw is balanced before handing the oven back.
- Mixer and proofer faults. Cuppone spiral mixers and proofers fail in their own ways: motors, switches, and heat control. If the dough side of the line is down, we handle it in the same visit as the oven.
