Cuppone in Vallejo
Cuppone commercial service.
State Route 29 runs north through the heart of Vallejo, and Mare Island is being rebuilt as a mixed-use district. A kitchen anywhere in that spread that bakes on a Cuppone Tiziano or Donatello needs each deck to hold its setpoint from the first pie to the last. When one deck starts turning out pale bottoms, the cause is electrical, and a meter finds it.
Many Cuppone decks are wired for three-phase 230V. Lose one leg of the supply, or one pole of a contactor, and part of a deck goes cold while the rest keeps heating. Our technician for Vallejo works out of Benicia, right next door. The visit opens with a $99 diagnostic that is credited toward the repair, and you see a written quote before any part is ordered. Common repairs we handle.
- One deck pale on the floor while the crown browns. Either the bottom element on that deck has opened, or the contactor pole that feeds it has burned. From the front the two look identical. We read the draw on each element with the deck calling for heat, test the contactor, and replace only the part that failed the test.
- Selector switch stuck on one setting. The selector switches on a Cuppone deck set how hard the floor and crown elements work. Years of heat and floury fingers wear the contacts until a switch sticks or skips a position. We check every position against what the elements actually do and fit a new switch and knob when one is worn.
- Capillary thermostat reading far from the stone. A capillary thermostat senses heat through a thin tube and a bulb near the deck. If the tube gets kinked or the bulb shifts out of its clip, the dial says one thing and the stone says another. We check the bulb and tube, compare the setting with a probe on the stone and replace the thermostat if it has drifted.

FAQ
Cuppone in Vallejo questions, answered.
-
What should we have ready before calling about a Cuppone in Vallejo?
The model name from the data plate, whether the oven is single or three-phase, and which deck is acting up. Tell us if the fault is on the floor, the crown or both. A photo of the control panel with the knobs where your cooks normally set them helps us bring the likely part. -
Do you work on Cuppone ovens installed in homes in Glen Cove or Hiddenbrooke?
Yes. A Cuppone in a home kitchen gets the same testing and the same parts as one on a restaurant line. It still needs a dedicated 230V supply, so we check the feed at the oven along with the elements and thermostats. -
Our Tiziano is well past ten years old. Is it still worth repairing?
In most cases, yes. The stainless cabinet and the decks outlast the parts that wear, and a sensor, contactor or element is a small job next to a new oven plus rewiring a hardwired 230V install. We give you a straight read and a written quote before starting.
