- Setpoint drift and uneven bakes. Nine times out of ten this is a temperature sensor or thermostat, not a dying oven. We meter it, replace the failed part, recalibrate the controls, and verify even heat across the stone under load.
- Capillary safety thermostats. The thermostat bank behind the control panel cooks in its own heat for years. When a capillary stat fails the deck cuts out or won't climb. We test the bank and replace what's gone.
- Door springs and deck gaskets. Stretched springs and worn gaskets let heat pour out the door, so recovery between pies gets slow. Cheap parts, real difference in a small kitchen running back-to-back tickets.
