  • Perlick back-bar icing once the bar closes. Doors propped through service stretch the gasket, and warm, humid bar air freezes on the evaporator as soon as the rush ends. We swap the gasket, adjust the door so it seals across the whole swing, and run a defrost.
  • Hoshizaki ice production dropping. Scale on the evaporator and a dirty condenser both stretch the freeze and harvest cycle, and output falls. We clean and descale the machine, check the water supply and inlet valve, clean the condenser, and run batches until production is back.
