A drifted or damaged probe feeds the controller bad numbers, and cooling and defrost go wrong together. We check each probe against a reference thermometer and replace the part at fault.
Evaporator fan quiet and the cabinet warming. Many newer units use electronically commutated fan motors, which fail differently from the older shaded-pole type. We test the motor and its supply from the board before replacing anything, since a dead board output looks just like a dead fan.
Prep table door gaskets torn at the corners. Prep table doors get kicked and bumped all day, and the gasket corners tear first. A torn corner lets humid kitchen air in, which frosts the coil and warms the rail. We fit a new gasket and adjust the door so it closes flush.
