- Cannot hold texture through the afternoon rush. Fine at 11 am, soup by 3 pm is a capacity problem, not a mystery. I test under actual afternoon load and usually find a marginal charge, a fouled condenser, or a compressor past its prime. Fixing the real limit gets the machine through August instead of just through the week.
- Hopper refrigeration failure spoiling mix. On models with refrigerated hoppers, a failed hopper circuit lets mix sit warm while the barrel still freezes, a food safety problem hiding behind decent product. I check hopper temps as part of every visit and repair the hopper circuit before the health inspector finds it first.
- Drive motor brushes and bearings at end of season. A full Los Gatos summer is a year of wear in three months.
