- Thermostatic gas valve losing calibration. On the older Chateau ranges in Point Richmond the mechanical oven valve is often original, and after decades it holds temperature loosely or hunts around the set point. I document the behavior against a probe, recalibrate where the valve allows it, and quote a replacement with realistic French lead time when it does not.
- Flame failure device dropping burners out. A burner that quits minutes into cooking, not just at light-off, points to a flame failure device weakening under heat. It is a subtler fault than a dead thermocouple and it gets misdiagnosed as a gas supply problem constantly. I test the device at operating temperature, which is the only test that means anything.
