I test each electrode and the spark generator separately, replace what failed with factory parts, and seal the lead routing so the marine air does less damage the second time around.
- Vaulted gas oven drifting off temperature. The Chateau oven uses a thermostatic gas valve, not an electronic control, and when it ages the oven can run 40 or 50 degrees off the dial. I verify the drift with a calibrated probe at several set points, then recalibrate or replace the valve rather than telling you to just compensate.
- Heavy enameled door sagging and leaking heat. La Cornue doors are cast and enameled, and they are heavy enough that hinges wear into a sag that breaks the seal along the top edge. I re-shim and adjust the hinges, and replace the gasket if the drop has already flattened it on one side.
