These are hand-built French ranges, assembled to order, and on the Millbrae side of the Hillsborough line there is a small set of estate kitchens where a Château range is the centerpiece of the room. When one of those needs work, the owner does not want a parts-changer guessing at it.

I treat a La Cornue call differently from any other range call. Before the visit I want the model, the vintage, and photos of the data plate and the problem, because parts come from France and a wrong order costs weeks. On site the work is deliberate: document, measure, adjust, and never force anything on a range that was fitted by hand.

Burner igniters clicking continuously or failing to spark. Moisture and boiled-over stock get into the spark electrodes on the open burners. We clean and re-gap the electrodes, test the spark module, and check the wiring harness insulation. On a hand-fitted top, careful reassembly matters as much as the part itself.
Vaulted oven running hot or cold of the set point. The natural-convection vault oven is the soul of a Château, and its thermostat calibration drifts over the years. We verify actual cavity temperature against the dial with a calibrated probe, then adjust or replace the thermostat. Owners are usually shocked how far off a beloved oven has drifted.
Heavy oven door sagging or sealing unevenly. These doors are substantial, and hinge wear shows up as uneven gasket contact and heat loss at one corner. We re-shim and adjust the hinges and replace the gasket where needed. Getting the door geometry right protects both baking results and the enamel finish.
