- Burner dies the moment you release the knob. ILVE cooktop burners use a flame failure safety device, a thermocouple that must heat up before the magnetic valve holds itself open. When the thermocouple ages or drifts out of position, the burner lights and then dies as soon as you let go. Owners often hold the knob for thirty seconds and give up. The fix is a correctly positioned new thermocouple, not a longer thumb.
- Gas oven running 40 degrees off the dial. The hydraulic thermostat on ILVE gas ovens drifts with age, and Castro Valley owners usually discover it when holiday baking comes out pale or burnt at the stated temperature. I verify the actual cavity temperature with a calibrated probe, adjust the thermostat where the range allows it, and replace the thermostat body when it is beyond adjustment.
