Facilities teams buy the right machine, a 1000 or 1200 watt RCS or CFT, but nobody cleans the air filter or the cavity, and the unit spends two years marinating in vaporized food before the magnetron or the stirrer motor gives up. On the restaurant side of El Camino, the story is slammed doors and worn keypads.

  • Cavity arcing from baked-on food residue. Uncleaned units eventually arc. Carbonized splatter on the cavity wall or the waveguide cover starts sparking mid-cycle, which scares staff and burns pinholes into the metal if it goes on long enough.
