Downtown San Mateo has one of the densest independent restaurant strips on the Peninsula, B Street and 25th Avenue both, with Japanese, Peruvian, and Italian kitchens packed close together. That density means a lot of KM cubers running full shifts and a real concentration of sushi cases, more than I see in most Peninsula cities on this route.

The sushi cases are the volume call downtown. Thermistor drift on a display case is quiet until the health inspector or the chef notices the temp reading doesn't match reality, and by then product has usually already sat too warm. Hard peninsula water is doing the same thing to KM cuber plates here it does everywhere else on this route, just against a bigger population of machines.

  • Evaporator plate scale on downtown KM cubers. A B Street or 25th Avenue kitchen running full dinner service coats the plate steadily on peninsula water. Cubes get shallow and cloudy before the machine visibly falls behind. I descale the plate properly, clear the water distribution tube, and confirm a full freeze-harvest cycle before I call it done.
  • Sushi case thermistor drift. The calibrated thermistor in a display case drifts out of spec over time, and the readout keeps showing a safe number while the actual case temp climbs. I carry calibrated replacement thermistors and verify against a separate probe before I leave, so the display reading matches reality again.
  • Hot gas valve hang on aging downtown units. A lot of the KM cubers downtown have been in service for years, and the hot gas valve is usually the first major part to give out. Harvest stretches or stalls and cubes stick to the plate. I isolate the valve, test coil resistance, and replace with OEM. It's not worth doing twice with an aftermarket coil.
