On these high duty cycle machines I check capacitor condition every visit even when it isn't the reason for the call.
Water Inlet or Drain Blockage. High volume cafeteria plumbing sometimes shares a supply line with dishwashing equipment, and pressure fluctuations from that shared line can intermittently restrict the ice machine's inlet, showing as a low production fault that comes and goes. I check line pressure at the machine itself rather than just the valve when that pattern shows up.
Auger Motor and Gearbox Wear. Near continuous cycling on campus cafeteria units puts more hours on the auger motor and gearbox in a year than most restaurants see in three, so I expect to find this wear sooner on Cupertino accounts than elsewhere. Amp draw testing under load tells me whether it's the motor or the gearbox before I quote parts.
