- Sushi case holding warm. A probe thermometer on the display deck tells us the real temperature. We compare it with the control reading, test the sensor's resistance and replace a drifted one with the calibrated part from the truck.
- Frost building on the case coil. Humid air leaking past covers or seals frosts the coil, and a frosted coil moves less air. We clear the frost, check the defrost cycle and the fan, and replace worn seals so the frost does not rebuild.
- KM cuber production dropping in a busy kitchen. A KM that falls 20% below its rated daily ice usually has scale on the plate. EBMUD water slows that, but it does not stop it. We descale and time a cycle against the rating, and clean the condenser while we are there, since a dusty coil costs output too.

Trust a thermometer over the display. A drifted thermistor makes the controls read cold while the case runs warm. Move product to another cold unit if you can, and we will test the sensor and replace it if it has drifted. -
