- Condenser airflow choke in tight equipment closets. A lot of the older El Camino Real buildings have the ice machine sharing a closet with the water heater or a walk-in condensing unit, and there is not enough clearance for the Hoshizaki condenser to shed heat. The compressor short-cycles on high head pressure and the machine reads as broken when it is really just suffocating. I clean the coil, check the clearances against Hoshizaki's spec, and tell you plainly if the closet needs a louvered door or a fan added.
- Evaporator plate scale on KM cubers. Standing behind a Belmont bar or pizza counter, a KM cuber loses production quietly. Cubes come out thin, the machine runs longer for less ice, and by the time someone notices, the plate is coated. I descale the evaporator, flush the water distribution tube, and time a full freeze-harvest cycle so you see the recovered output, not just my word for it.
- Float switch and inlet valve fouling. Mineral and slime build up on the reservoir float switch and the water inlet valve screen, and the machine either overfills, underfills, or throws a water-system fault mid-batch. I clean or replace the float, sanitize the reservoir, and clear the inlet screen so the fill cycle reads correctly again.
