Condenser coil coated with kitchen grease. A restaurant unit on University Avenue running full lunch and dinner service builds a grease film on the condenser coil faster than a lighter duty account, and once that coil is coated it can't shed heat properly. Head pressure and amp draw climb a little on every cycle after that, and the run capacitor is usually the first part to fail since it's the weakest link electrically, though I've seen compressors go the same way after months of being ignored.
Fill valve or drain path scaling up. Medical office units running steadily through a full day of patients build scale in the water inlet gradually, and the fault that shows up is a low production error rather than an outright stop. I've had front desk staff assume the machine was just cycling slow for days before calling.
Auger and gearbox wear on estate kitchen units. Even a lightly used estate unit built into a butler's pantry can wear out the auger flight or develop slack in the gear train after five or six years, same as a restaurant machine, it just takes longer to show up since the unit isn't running as many cycles a day.
