Prep rail warm while the cabinet below stays cold. The rail on top depends on cold air rising from below. A stalled fan, a blocked air path, overfilled pans or a lid left open through service can each leave the top warm. We check all of them and confirm the rail temperature with pans in place.
Reach-in door that no longer closes on its own. Self-closing hinges wear and sag with constant opening, and a door that hangs open a finger's width is enough to ice the evaporator. We adjust or replace the hinge hardware, align the door, and check the gasket seal all the way around.
