Moraga is a small town with a short list of commercial kitchens, mostly clustered around the Rheem Valley shopping center and the Moraga Center, plus the food operations serving Saint Mary's College. Small list, but when one of those machines fails there is no backup unit down the street to borrow from, so speed matters more here than in a big city. What we close on the truck.

Long freeze faults on Indigo NXT machines. A long freeze code has maybe five common causes: dirty condenser, weak pump, low charge, scaled probe, or bad water feed. The Indigo NXT tells you the fault happened, and the seminar training is what tells you which cause it was. We work the list with instruments and give you the answer in writing.
Water inlet valves killed by pressure spikes. Parts of Moraga see supply pressure well above what valve diaphragms enjoy long-term. The valve starts weeping, ice goes cloudy, and the sump overfills overnight. We replace the valve and, when the static pressure justifies it, recommend a small regulator on the feed line so you are not buying valves annually.
Curtain switch faults stopping production early. The water curtain tells a Manitowoc that harvest finished. When its magnet or switch drifts out of alignment, the machine believes the bin is full and simply stops, no dramatic failure, no code that jumps out. It is a cheap fix that gets misdiagnosed as a board all the time, and we test it first.
