What we close on the truck.

Condenser coil packed with dust and cooking grease. A break room unit running three shifts a day doesn't get much attention, and the condenser coil behind the front grille cakes up with dust from the HVAC return before anyone notices. Once that coil is packed, the machine can't shed heat properly, so head pressure and amp draw creep up on every cycle. That extra load usually kills the run capacitor first, since it's the weakest part in that circuit electrically, though I've seen it take the compressor with it if it sits ignored long enough.
Fill valve or drain line running restricted. Restaurants near Great Mall that run a Horizon 700 flat out during dinner service build scale in the water inlet valve faster than a lighter-duty account would. Rather than stopping outright, the machine drops into a low production error, so the kitchen keeps thinking the unit is just slow instead of catching the fault early.
Auger and gearbox worn down from years of duty. On older units in the semiconductor break rooms that never got serviced, I regularly find the auger motor spinning fine but the flight inside worn smooth or the gear train loose enough that it can't lift pellets to the bin. The result is a machine that sounds normal and runs its cycle but makes almost no usable ice.
