Traulsen is common in hospital kitchens for a reason, and that same heavy-duty build is all over this city.

Commercial calls go through our division Bay Area Refrigeration Service. On the remote systems we see in larger Mountain View facilities, the compressor lives on a roof or in a mechanical room, sometimes thirty feet of line set away from the cabinet. A warm box can mean a failed contactor at the cabinet, a tripped condensing unit upstairs, or a leak anywhere between.   • Remote condensing unit failures blamed on the cabinet. A remote Traulsen reach-in that goes warm often gets misdiagnosed at the cabinet. The controller and fans look fine because they are fine. The condensing unit on the roof lost a fan motor, a contactor, or its charge. We check cabinet-side controls first, then go to the roof with gauges before recommending anything.
  • Evaporator icing from failed defrost termination. High door traffic on a lunch-rush line loads the coil with moisture. If the defrost termination thermostat fails, the heater either runs too long and cooks the plenum or quits early and lets ice choke airflow. Either way the box loses capacity slowly over days. We test the heater, termination, and controller defrost settings as a system.
