Blast chiller pulling down too slowly. When batches take longer and longer to chill, something is costing the chiller capacity. A frosted coil, a slow evaporator fan, a dirty condenser or a low charge all show up this way. We run a timed pull-down with a probe in the product, then correct each loss we find.
Food probe reading wrong. Blast chillers can end a cycle on product temperature, read from a probe pushed into the food. A damaged probe or a pinched cable ends the cycle early or runs it far too long. We test the probe against a reference thermometer and replace it when the reading is off.
Condenser clogged on a hard-working chiller. A blast chiller moves a lot of heat in a short time, and its condenser has to get rid of it. A dirty coil cuts that capacity and pushes head pressure up. We clean the coil and fan, measure pressures under load, and show your staff where to check it.
